It was a Very Busy Friday - Now Onward to Saturday

Last night's dinner worked out all right, despite the cooking clashes of different schedules. I was making my favorite salmon recipe for myself (https://www.wellplated.com/baked-salmon-in-foil/), and he had a trout fillet defrosted that he was baking when he got home from the shop. My salmon was done before he got home, so I put it into the microwave to sit, thinking a smaller space would hold the heat longer. I still had to put mine under the broiler for 3 minutes (I did increase the time another minute to get it thoroughly heated through again), and he needed the oven for 10 minutes for his trout. 




I do love my baked salmon in foil recipe. It's 
as easy as a recipe can be, and it tastes 
fabulous. Of course, I adore salmon, so that's 
certainly part of it as well - LOL. The best 
thing about Lent is eating fish on Fridays. 



Now, there wouldn't have been any problem at all, except my salmon cooked at 375 F and his trout needed 450 F. But, despite the temperature differences and schedule issues, they both worked out beautifully and I thought mine, at least, was very tasty. I think he really liked his trout, but was unimpressed with the soup he had made to accompany it. Oh well, can't win them all - LOL. 




I looked for the printout of his recipe so that I could show 
you a closer look at his trout, but this is as close as I 
could get since the recipe seems to have gone walk-about. 
He approved of his fish, but wasn't fond of the variety 
of soup he had picked to go with it. 



I spent the morning making six glorious, huge stuffed peppers. They're absolutely amazing and ready to heat and eat. I went to Whole Foods to get my peppers. Their organic colored peppers are huge and always beautiful. I got two red, two orange and two yellow. Not because they taste very different - they really don't. Just because I smiled at the colors. What can I say? I love color. Two pounds of ground beef and lots of carrots and onions and spices added, made for a lovely sextet of stuffed peppers. I can't wait to eat my first one tonight.

and I think they turned out fine. I seem to remember my 
Mother's stuffed peppers were done in a large stock 
pot with tomato juice, so more boiled than baked. I'll 
check into that possibility another time. I wouldn't 
have been able to fit more than four of these peppers 
into my stock put in any case - they're HUGE. LOL



I ran into an old friend while at Whole Foods, an old beading buddy whom I haven't seen for years. We had a lovely catch-up chat for several minutes while her partner headed out to their car to wait for her. It was lovely to see Linda. We used to have so much fun beading together, and she was a regular visitor to the store. She's doing other crafts now, but we still found plenty to talk about in the ten minutes or so we stood talking at the checkout aisle. 




It was lovely catching up with Linda. We were totally 
using social distancing, her mother is 97 years old 
and currently in the hospital because of a fall, and 
we don't want anyone to get ill because of a hug, so 
no touching. Still, it was delightful to catch up with 
her for a short time. 



So, all in all, it was a good Friday, if a busy one. I also made a quick batch of "Ogre Juice" for my next week. I now have two of them in the freezer and two in my "take to the shop" glasses, ready to take with me. One will be going with me today, in fact. Have an excellent day and a good weekend.
